Our tomatoes are grown in the Aegean region of Turkey and are harvested in August.
Only ideal tomatoes are carefully picked when they are at the peak of their maturity. The tomatoes go straight to the processing plant so as not to lose any color or flavor.
Tomatoes are cut in half and dried under the sun for 5-6 days. During the drying process, we apply salt (or optional sulfur) to the tomatoes as it creates a natural barrier against birds, insects or rodents.
After drying, the tomatoes are taken to the factory to be sorted and kept in the cold. Dried tomatoes from the cold storage are washed and processed (cutting, packaging, etc.) as the order arrives to ensure the best flavor and quality throughout the year.
