Sun Dried Tomatoes are an indispensable natural product for many world cuisines and are widely used in salads, meals, bakery products.
At harvest time, ripe tomatoes are cut in half and pretreated with salt or sulphur before being exposed to the sun for five to seven days. Tomatoes lose most of their water content in the drying process. Cherry tomatoes typically lose almost 90% of their initial weight, while larger tomatoes lose 93% of their pre-dried (fresh) weight. Thirteen to fourteen kilos of fresh tomatoes may be required to produce one kilo of sun-dried tomatoes.
