Prunes (Dried Plums) are mechanically shaken off from the trees to blankets on the floor and dry under the sun. Pitted Prunes (no-pit) are classified by the machine used while pitting. There are two methods/machines, Ashlock and Elliot.
For both pitted and unpitted prunes, the last step will be spraying with sorbic acid. This will preserve the end product and also make the skin shiny.
Prunes are consumed as a snack, in cereal mixes, bakery and confectionery. Also it is widely used in cooking both sweet and savoury dishes.
